The typical cuisine of the Bergamo province is an earthy one, with clear and strong flavors. It is a poor peasants’ cuisine but very rich in personality, with cold meats, great cheeses and important wines, strictly made according to tradition. It is a cuisine with meat, game and polenta (dish made with maize flour) where quality and solidity prevail. How can we not mention the casonsei, meat raviolis in a butter and sage sauce, the polenta taragna (made with a mix of maize and buckwheat flour), grilled and stewed red meats, game and small birds, real or “rolled”? There are also lake dishes, with the stuffed tench playing a leading role, as well as simple homemade cakes and sweets, made with eggs, flour and jams but also with maize and chestnuts. The typical products are many and all of high quality. Impossible not to mention the vineyards of the Doc Valcalepio, with its 70-km long Road of wine and of flavors, the Moscato di Scanzo, the Passito Moscato Doc and even the excellent extra-virgin olive oil, delicate and aromatic. The Valbrembana offers a multitude of cheeses, the Taleggio, the Strachitunt, the Branzi, and the Formai de Mut Dop to mention a few. And finally, typical of the entire province are the cold meats, like lard, sausage and the bergamasco salami. Excellent results in agriculture and beekeeping too, with the production of acacia, chestnut and honeydew honey. Admiring the countryside and valleys of the Bergamo province while dedicating your time to cultivating “taste” and discovering otherwise impossible to find flavors can be a pleasant and relaxing experience, an enjoyable distraction from a typical day in the city and a unique chance to see a cross-section of a peasant lifestyle that is unfortunately disappearing here too. In this extraordinary territory, rich with natural beauty and food and wine reserves, we decided to organize specific tours aimed at discovering the best products that the earth and man have to offer. We organize thematic excursions, tastings of single products or gastronomical overviews in which you can appreciate the flavors and aromas of an ancient time. During our outings, we propose visits to wine cellars, farms, dairy farms and boarding farms that have made and still make tradition and direct production their philosophy, in order to guarantee extremely high quality and genuineness. In addition, we will be sure to point out country fairs and festivals, where you can always discover and try something new. We decided to also include places of gastronomical and wine interest near our province: for example, Valtellina and Franciacorta, but also the territories of Parma and Piacenza, the Langhe region in Piedmont and all those realms of good food and wine that are within a two or three-hour ride by car and that are sure to guarantee enjoyable days filled with excellent cuisine.
